These Easter Cake Push-Up Pops are a playful twist on classic Easter cakes and cupcakes. Rich chocolate cake is mixed with chocolate frosting to form a moist filling, layered into clear push-up containers, then finished with “coconut grass,” chocolate rocks, marshmallow bunny tails, candy carrot toppers, and white chocolate bunny ears.

🥕Push-Up Pops: An Easter Dessert with a Twist
Easter is one of the best times for creative baking. Pastel colors, bunny- and chick-themed decorations, and egg-shaped treats make it easy to design desserts that are both festive and delicious. Push-up pops take that idea and make it portable, portioned, and super fun to serve—perfect for an Easter party or a family treat.

What Are Push-Up Pops?
Push-Up Pops are individual dessert shooters made in clear plastic tubes. They can be layered like a tiny trifle or mixed into a cake-pop-style filling of crumbled cake and frosting. They’re tidy to eat, easy to transport, and look adorable when displayed together. For these Easter versions, chocolate cake is crumbled and combined with chocolate frosting, then topped with coconut dyed green to resemble grass and decorated with small candy accents.

🧾 What You’ll Need

Ingredients
These push-up pops use crumbled chocolate cake combined with chocolate frosting to create a dense, moist mixture. I like to stir in chocolate rocks for texture, top with shredded coconut dyed green for “grass,” and finish with small handmade decorations like marshmallow tails, candy-coated carrots, and white-and-pink chocolate ears.
- Chocolate cake (a 9×13-inch cake yields enough crumbs)
- Chocolate frosting to bind the crumbs
- Chocolate rocks or other mix-ins (pretzels, crushed cookies, etc.)
- Sweetened shredded coconut and green gel food coloring for the grass
- White candy coating and colored candy coating melts for ears and carrots
- Mini marshmallows and white sprinkles for bunny tails
- Clear push-up pop containers for assembly

Equipment
Most home kitchens will have what you need, but if you plan to make push-up pops regularly, get a set of clear plastic push-up containers. They make assembly and presentation much easier.
📋Instructions
Below are the main steps to assemble the pops and create the decorations. Full ingredient amounts and detailed steps appear in the recipe card that follows.

To Make Coconut Grass:
- Place shredded coconut and a few drops of green gel food coloring in a plastic bag and shake or rub until the coconut is evenly tinted. Add more coloring until you reach the shade you want.
- If you prefer not to use coconut, swap in green-tinted frosting or edible grass available seasonally in stores.
- Reserve some chocolate rocks to sprinkle on top of a few pops for variety.

To Make Candy Carrots:
- Melt orange and green candy coatings in separate bowls. Transfer each color to a piping bag or small plastic bag, snip a tiny corner, and pipe green tops on parchment. Pipe orange carrot shapes overlapping the green tops. For depth, pipe a second layer after the first firms slightly.

To Make the Bunny Butts:
- Cut mini marshmallows in half and skewer the halves on a toothpick. Dip in melted white candy coating and roll in white sprinkles to create a fluffy tail. Roll a small portion of reserved cake/frosting mixture into a truffle, chill to firm, then dip in white coating and press the marshmallow tail into the top while the coating is still wet.

To Make the Bunny Ears:
- Melt white and pink candy coatings separately. Pipe a thin pink line, then surround it with an oval of white coating to form an ear shape. Make two ears per pop and let them set on parchment until firm enough to handle.
💭 Variations
These pops are flexible—here are some easy ways to change them up:
- Use any cake: Substitute 10 cups of crumbled cake (about a 9×13 cake) in place of the specific chocolate cake recipe.
- Swap mix-ins: Add crushed pretzels, cookies, chopped nuts, or chopped candy bars instead of chocolate rocks.
- Change decorations: Feel free to pipe different shapes or use whatever candies you have. Homemade toppers don’t need to be perfect to be charming.

💡 Tips for Easter Push Up Pops
- Cool the cake completely: Work with fully cooled cake so crumbs mix evenly with frosting and decorations sit neatly.
- Reserve some cake: Keep a small portion of the cake/frosting mixture aside to form truffle bases for the bunny butts.
- Make extras: Prepare a few extra ears and carrots in case some break during handling.
- Display: To keep pops upright, set them into a block of florist foam or small glasses for serving.
- No push-pop containers? Fill small clear glasses or mason jars instead—the dessert will still be delicious and portable.

Easter Push-Up Pops
Ingredients
For the Cake:
- 6 oz unsalted butter, at room temperature
- 2 large eggs, at room temperature
- 8 oz buttermilk (1 cup), at room temperature
- 10 oz chocolate frosting (about 1 3/4 cups)
- 4 oz chocolate rocks (about 1/2 cup) or other mix-ins
- 2 oz sweetened shredded coconut (about 1/4 cup)
- Green gel food coloring, candy coating melts, mini marshmallows, white sprinkles
Instructions
To Make the Cake:
-
Preheat the oven to 350°F and prepare a 9×13-inch pan. Cream butter and sugars until light and fluffy, add eggs one at a time, then stir in vanilla. Alternate adding the dry ingredients and the buttermilk/sour cream mixture, beginning and ending with the drys. Pour batter into the pan and bake about 25 minutes or until a toothpick comes out with a few moist crumbs. Cool completely.
To Make the Pops:
-
Crumble the cooled cake into a large bowl. Stir in 1 cup of chocolate frosting and work it into the crumbs; add up to 1/2 cup more frosting as needed until the mixture holds together when rolled. Stir in chocolate rocks or other mix-ins.
-
Spoon the cake mixture into push-up containers and press down gently to compact. Reserve a little mixture to form truffles for the bunny butts if desired.
-
Spread a thin layer of leftover frosting on top of each filled pop, press green-dyed coconut on top to form grass, and add a decoration—ears, carrots, bunny tails, or a sprinkle of chocolate rocks.
To Make the Decorations:
-
Melt candy coatings and pipe carrot shapes and ear shapes onto parchment. For ears, pipe a small pink inner shape and surround with white. For tails, dip halved mini marshmallows in white coating and roll in sprinkles, then affix to small chilled cake truffles while the coating is still wet.
