Hearty Paleo Chicken Soup Recipe for Immune Support

This soup is simple, flavorful, and family-friendly. Even picky eaters enjoy it, and my kids always ask for seconds—even though it’s full of vegetables.

You don’t need to be sick to make this. Some days I just want chicken soup, and this is my go-to. It’s relatively quick, too—you can have dinner ready in about an hour, or less if your chicken is already cooked.

A Twist on a Classic

I grew up with canned chicken soup as the typical “sick food” and never cared for it—the noodles and bland chicken put me off. Then a friend introduced me to her family recipe, which included bold flavors like soy sauce and generous amounts of garlic. Her soup changed my view entirely.

That recipe inspired me, and when we later removed grains and soy from our diet I reworked the flavors into a version that fit our needs. After testing for a couple of months, the result is this recipe—so flavorful and nourishing that my whole family loves it.

This soup shines because the simmered vegetables and spices infuse the broth, and the chicken adds hearty protein. Key ingredients include:

  • Chicken. Use organic chicken if possible—thighs, breast, or a whole chicken all work well.
  • Chicken or bone broth. Organic broth is preferable to avoid additives and boost flavor.
  • Vegetables. Onion, celery, carrots, and cauliflower add texture, fiber, and nutrients.
  • Herbs and spices. A thoughtful blend of aromatics and seasonings transforms this soup into a savory, comforting meal.

Nourishing Chicken Soup

This easy family-favorite chicken soup is packed with ingredients and nutrients that are both nourishing, warming, and delicious.

Ingredients

  • 2–3 lb chicken thighs, breast, or a whole chicken
  • 4 cups organic chicken broth
  • 6 cups water
  • 1/2 cup onion, chopped
  • 1 tsp fresh ginger, grated
  • 3–4 cups carrots, chopped
  • 2–3 cups celery, chopped
  • 6–8 garlic cloves, minced
  • 1 tsp ground turmeric
  • 1 head cauliflower
  • 1 tsp fish sauce
  • 1/2 Tbsp basil
  • 1/2 Tbsp parsley
  • 3 Tbsp coconut aminos
  • 1.5 tsp sea salt, more or less to taste
  • 1/4 tsp black pepper, more or less to taste

Instructions

  1. Fill a large pot with water, add the chicken, and bring to a boil. Reduce heat and simmer about 30 minutes or until cooked through. Remove the chicken and set aside.
  2. While the chicken cooks, chop the vegetables.
  3. In a large stock pot, combine the broth and 6 cups of the water the chicken cooked in. Add onion, ginger, carrots, celery, garlic, and turmeric. Bring to a boil, then reduce heat to medium, cover, and cook about 10 minutes.
  4. Meanwhile, cut the cauliflower and pulse in a food processor until it resembles rice. If you don’t have a processor, chop it into small pieces.
  5. Shred the chicken, then add the chicken and cauliflower to the pot along with fish sauce, basil, parsley, coconut aminos, sea salt, and pepper.
  6. Bring the soup to a gentle boil, then lower heat and simmer, covered, until the vegetables are tender. Adjust seasoning to taste.
