Ingredients

  • 1 tablespoon olive oil
  • 1 green pepper, sliced very thin and diced
  • 1 onion, sliced very thin and diced
  • ¾ lb roast beef, sliced thin from the deli
  • 1 tablespoon Worcestershire sauce
  • 4 slices provolone cheese, cut into small squares (or American cheese)
  • Salt and pepper, to taste (about ¼ teaspoon each)
  • 1 pastry sheet (17.3 ounce package frozen puff pastry), defrosted

Optional Sauces

  • ¼ cup horseradish sauce, mayonnaise, or ketchup for serving

Instructions

Defrost Pastry Dough and Prep Filling

  1. Remove one sheet of puff pastry from the box and let it defrost at room temperature for about 40 minutes. While it thaws, slice and dice the green pepper and onion and cut cheese into small squares. Keep the cheese at room temperature.
  2. Heat olive oil in a skillet over medium-high heat until shimmering. Add the diced green pepper and onion and sauté until softened. Remove the veggies and set aside.
  3. Slice the roast beef into thin strips if needed.
  4. Place the roast beef in the skillet, add Worcestershire sauce, toss, and cook about one minute until heated and slightly browned. Season with salt and pepper to taste.
  5. Preheat the oven to 400°F once the puff pastry is thawed.

Assemble and Bake

  1. Cut the puff pastry into 2-inch squares using kitchen scissors and press each square into a mini muffin cup.
  2. Place several strips of beef into each pastry-lined cup (about 1 tablespoon). Top with about two teaspoons of the sautéed pepper and onion mixture.
  3. Bake 8–10 minutes until the pastry is lightly browned and the filling is sizzling. Remove from the oven and quickly place a small square of cheese on top of each bite. Return to the oven and bake 5–6 more minutes until the pastry is flaky and the cheese is melted.
