Kielbasa (also called Polska kielbasa) is a smoked, seasoned sausage. It’s typically precooked, so the oven step mainly warms the meat and crisps the edges while roasting the vegetables until tender.

We adapted a skillet version of kielbasa and potatoes into this sheet-pan method to cook a larger batch with less fuss. During testing we discovered that consistent piece size matters more than shape—uniform chunks ensure even cooking and make every bite enjoyable.

What Size Should the Sausage and Potatoes Be?

Aim for thick 1″–2″ coins of kielbasa and bite-sized potato chunks. Matching piece sizes helps everything cook evenly and maximizes how much you can fit on one sheet pan—this version serves about six people.

Some prefer larger kielbasa pieces to retain juiciness, but larger pieces may need to be cut on the plate, which can be less convenient for children.

Avoid thin potato slices for this sheet-pan approach; they take up more surface area and reduce the amount you can roast at once. Chunks or cubes are more efficient and crisp nicely.

Because kielbasa is precooked and smoked, it only needs to be heated through and browned to develop extra flavor.

How To Cook Kielbasa In the Oven

Preheat the oven to 400°F and lightly grease a large baking sheet. Cut potatoes into bite-sized chunks and rinse if desired.

Toss the potatoes with about 2 tablespoons of oil, Italian seasoning, kosher salt and black pepper. Spread them in a single layer and roast for 15 minutes.

After 15 minutes, stir the potatoes and add broccoli (or other vegetables) lightly coated with oil. Roast an additional 5 minutes.

Stir the tray to prevent sticking and redistribute the pieces for even browning. Then nestle the kielbasa slices among the vegetables and roast 10 more minutes, until the sausage is warmed through and everything is tender and slightly crispy.

Total cook time for the sheet pan is roughly 30–40 minutes, depending on potato size and how crowded the pan is.

How Long To Roast Potatoes

Bite-sized potato chunks usually need about 30 minutes at 400°F. Turn them two or three times during roasting to promote even browning and prevent sticking.

  • 1 1/2 pounds Kielbasa Smoked Sausage
  • 1 1/2 pounds baby red potatoes
  • 3 cups broccoli
  • 2 teaspoons Italian seasoning

Instructions

  • Preheat oven to 400℉.
