Ingredients

  

  • 2 granny smith apples peeled, cored and diced
  • 4 tablespoons unsalted butter
  • 1/4 cup light brown sugar packed
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon vanilla bean paste or extract
  • 2 sheets puff pastry
  • 1 egg lightly beaten with a splash of water

Instructions

  • In a large skillet over medium heat, melt the butter and add the brown sugar. Stir until the sugar dissolves, then add cinnamon. Add the diced apples and stir to coat. Cook 10–15 minutes, stirring occasionally, until the apples are tender and slightly caramelized. Remove from heat, stir in the vanilla, and let the mixture cool slightly.
  • Preheat the oven to 400°F (200°C). Lay the puff pastry sheets flat and pierce them all over with a fork. Cut each sheet into four equal squares. Place a small spoonful of the apple filling in the center of each square.
  • Fold each square into a triangle, pressing the edges together to seal. Crimp the edges with a fork and poke a few holes in the top to vent. Brush the tops with the beaten egg mixture. Bake 15 minutes or until the turnovers are puffed and golden brown. Let cool slightly before serving.
