Method overview:

  1. Line a baking sheet or large plate with parchment paper and set aside.
  2. Split each date and remove the pit. You can do this with your fingers or use a knife to help.
  3. Spoon about 1 teaspoon of your chosen nut or seed butter into each date and press the opening closed. I used sunflower seed butter, but any nut or seed butter will work; a slightly salted option balances the sweetness nicely.
  4. Heat the dairy-free dark chocolate in a small saucepan over medium-low heat, stirring until fully melted. Transfer the melted chocolate to a bowl suitable for dipping.
  5. Use a toothpick to dip each stuffed date into the melted chocolate, turning to coat evenly. Let excess chocolate drip off, then set the date on the parchment-lined sheet. A second toothpick helps release the first without damaging the coating.
  6. Before the chocolate sets, sprinkle each date with grain-free dark chocolate strawberry granola or another crunchy topping.
  7. Repeat until all dates are coated. Let them set at room temperature, or refrigerate or freeze for faster setting.
  8. Store leftovers in an airtight container in the refrigerator for up to one week, or freeze for longer storage.

Ingredients

  • 10 Medjool dates
  • 24 TBSP nut or seed butter
  • ½ cup dairy-free dark chocolate chunks or chocolate chips
  • ¼ cup grain-free dark chocolate strawberry granola
  • ½ cup additional dark chocolate chips (for dipping)

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. Break open each date and remove the pits.
  3. Fill each date with about 1 tsp nut or seed butter and press closed.
  4. Melt the dark chocolate over medium-low heat, stirring until smooth. Transfer to a bowl for dipping.
  5. Use a toothpick to dip and coat each date in melted chocolate. Place on the parchment-lined sheet and remove the toothpick carefully.
  6. Before the chocolate hardens, sprinkle each date with grain-free granola.
  7. Repeat until all dates are coated. Let them set at room temperature or chill to speed setting.
  8. Store in an airtight container in the refrigerator for up to one week, or freeze for long-term storage.
