Today marks the first day of autumn, and I couldn’t be happier. I’m not much of a summer person—though this year was lovely—and I’m ready to pull out my sweatshirts, sweaters, and, best of all, my slow cooker.

I usually use the slow cooker more once the weather cools. This past summer stayed cooler than usual, so I didn’t reach for it as often. Now the season is changing, I’m planning to bake more treats and make lots of slow-cooked meals to stay out of a hot kitchen—a win for everyone.

And a quick personal note: today is Mr. B’s birthday. Happy birthday!

Slow Cooker Boneless Apple Short Ribs

Mr. B loves ribs, so last week he picked up some boneless short ribs for me. I wasn’t sure if the store only had boneless or if he chose them because I prefer not to eat off the bone, but either way I decided to experiment with them.

I consulted a couple of recipes for guidance and adapted them to include apples for a seasonal touch. Apples and autumn are an obvious pairing, and they add a nice sweet-tart balance to rich, slow-cooked beef.

Ingredients

  • 2 pounds boneless short ribs
  • 2 cups coarsely chopped apples
  • 1 tablespoon vinegar
  • cup low sodium soy sauce
  • 3 garlic cloves
  • 4 scallions chopped into large pieces
  • kosher salt and pepper for seasoning

Instructions

  • Season all sides of the short ribs generously with kosher salt and pepper. Brown the outside in a hot pan, then transfer the ribs to the bottom of the slow cooker.
  • In a blender or food processor, combine the apples, vinegar, soy sauce, garlic, and scallions. Process until the mixture is well combined and fairly thick. Pour the apple mixture evenly over the short ribs.
  • Cook on low for about 6 hours, or until the short ribs are tender and cooked through. Serve with additional apple slices if desired.

Notes
