My love of fajitas is no secret. The spice mix is bold enough that I usually don’t bother marinating, and this keeps the meal quick without sacrificing character.
Fajitas are incredibly versatile—I’ve adapted the flavour into potatoes, pasta and traybakes—but this classic pan-fried version remains my favourite because it brings everyone together around the table.
Choose your favourite tortillas—wheat, corn, large or small. To keep them warm, wrap the stack in foil and place in the oven at about 100°C fan / 120°C / 250°F while you finish the fajitas.
Chicken Fajitas Ingredients

- Olive oil – for pan-frying (sunflower or another neutral oil works too).
- Chicken – chicken breasts, about one per person, sliced into strips.
- Fajita seasoning – use a homemade blend or a good jarred mix for best flavour.
- Peppers – a mix of red, yellow and green peppers, sliced; frozen peppers work if preferred.
- Red onions – peeled and cut into wedges.
- Tortilla wraps – your preferred type; this recipe uses eight regular-sized tortillas.
- To serve – sour cream or plain yoghurt, sliced avocado, grated cheddar, tomato salsa, lime wedges and fresh coriander.
How to make Chicken Fajitas
1. Toss the chicken with the fajita seasoning and half the oil in a large bowl so the strips are well coated.
2. Heat a large frying pan over high heat and add the spiced chicken. Cook for about 5 minutes until the chicken begins to turn golden.
3. Add the remaining oil, then add the sliced peppers and onion. Stir and cook together.
4. Continue to cook for another 5–10 minutes, stirring often, until the chicken is cooked through and the veg is slightly softened with some charred edges. Serve with tortillas and toppings and let everyone build their own wraps.
Substitutions
- Vegetarian – Try halloumi instead of chicken for a satisfying vegetarian option.
- Beef – Swap chicken for sliced beef and use the same method for classic beef fajitas.
Leftovers
In the fridge: Fold the cooled chicken mix into tortillas, store in a container and refrigerate for up to 3 days—perfect for lunches. The filling is not overly saucy, so it should be easy to eat cold or reheated.
Reheating: Reheat in the microwave or in foil in the oven. You can also serve cold if preferred.
In the freezer: The filling freezes well. Cool completely, place in a freezer-safe container and freeze up to 3 months. Defrost thoroughly before reheating.

Easy Chicken Fajitas
Ingredients
- 650 g Chicken breasts, Cut into strips
- 4 tbsp Fajita seasoning
- 2 tbsp Olive oil
- 1 Red pepper, Deseeded and cut into thick slices
- 1 Yellow pepper, Deseeded and cut into thick slices
- 1 Green pepper, Deseeded and cut into thick slices
- 2 Red onions, Peeled and cut into wedges
To serve:
- 8 Tortilla wraps
- 150 g Sour cream
- 2 Avocados, Sliced
- 150 g Cheddar cheese, Grated
- 200 g Tomato salsa
- 1 Lime, Cut into wedges
- 15 g Coriander
Instructions

Flavour the chicken: Place the chicken in a large bowl and mix with the fajita seasoning and half of the oil.

Pan fry: Heat a large frying pan over high heat and tip in the spiced chicken. Cook for 5 minutes until it starts to turn golden.

Add the rest of the oil, then add the peppers and onions to the pan.

Cook everything together for 5–10 more minutes, stirring often, until the chicken is cooked through and the vegetables are slightly softened with a little char.
