Ingredients

  • 4 Produce Moms X Wada Farms Easy-Bakers
  • 3 med/large bell peppers red, yellow, green
  • 1 large red onion
  • 3 portobello mushrooms
  • 3 garlic cloves
  • 4 tbsp olive oil
  • 2 tsp cumin
  • 1 1/2 tsp chili powder
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp smoked paprika
  • 1 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • Toppings of choice (our healthier picks: guacamole and salsa)

Instructions

  1. Heat the Produce Moms X Wada Farms Easy-Bakers following the sticker instructions.
  2. Thinly slice the bell peppers and red onion. Remove stems and slice the portobello mushrooms. Smash the garlic cloves. Toss the prepared vegetables and garlic with 3 tablespoons olive oil, cumin, chili powder, garlic powder, smoked paprika, kosher salt, and black pepper.
  3. In a large skillet over medium-high heat, warm the remaining tablespoon of olive oil. Add the seasoned vegetables and cook about 15 minutes, stirring occasionally, until tender and lightly charred. Taste and add more salt if needed. Remove and discard the garlic cloves.
  4. Cut a slit lengthwise in each Easy-Baker, open it slightly, fill with the fajita vegetables, and top with your favorite toppings.
