Peanut Butter Truffle Brownies

Layers of fudgy brownie, a soft peanut butter truffle and a rich chocolate ganache combine for an unforgettable dessert.
Ingredients
- Brownies
- 1 cup butter, softened
- 2 cups sugar
- 4 eggs
- 1 1/2 teaspoons vanilla
- 1/2 cup cocoa
- 1 1/3 cups flour
- 1/2 teaspoon salt
- Peanut Butter Truffle
- 1/3 cup butter
- 1/3 cup peanut butter
- 1 1/3 cups powdered sugar
- 1 1/2 teaspoons milk
- Ganache
- 1 1/2 cups chocolate chips
- 1/3 cup heavy cream
Instructions
Brownies
- Preheat oven to 350°F (175°C).
- Cream the butter and sugar together until smooth.
- Add the eggs and vanilla, mixing until well combined.
- Stir in the cocoa, flour and salt until the batter is uniform.
- Pour the batter into a greased 9×13-inch pan and bake for 20–25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow the brownies to cool completely before adding the next layer.
Truffle
- In a small bowl, cream the butter and peanut butter together. Add the powdered sugar and milk, then beat until the mixture comes together into a smooth, spreadable truffle. Press evenly over the cooled brownies.
Ganache
- Place the chocolate chips and heavy cream in a microwave-safe bowl. Heat on high for 1 minute, stir, then continue heating in 30-second intervals, stirring after each, until the chocolate is fully melted and the ganache is smooth.
- Pour and spread the ganache over the peanut butter layer. Chill briefly to set, then slice and serve.
