Cottage cheese–filled baked potatoes: oven-baked potatoes with a light, flavorful filling. The mix of ham, fresh herbs, and cottage cheese keeps this dish low in calories but rich in taste — a perfect side.
Potatoes are endlessly adaptable, and one of my favourite methods is to bake them and stuff them with a simple topping. Traditional fillings like sour cream are tasty but higher in calories. This version uses cottage cheese for a creamy texture with fewer calories, paired with chives, parsley and deli ham for a satisfying, fresh flavour.
- To check if the potatoes are done, pierce one with a fork. If the fork slides in easily without resistance, they’re ready.

Ingredients
- 4 slices deli ham
- 4 sprigs chives
- 4 sprigs fresh parsley
- ⅔ cups cottage cheese
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- 4 large potatoes, floury
All recipes are provided in Metric and US Customary units.
Instructions
Preparing filling

Cut the ham into thin strips.

Finely chop the chives and parsley.

Combine the cottage cheese with the chopped ham and herbs until evenly mixed.

Season to taste with salt and pepper, then refrigerate until needed.
Loaded baked potatoes

Preheat the oven to 390°F (200°C).

Scrub the potatoes clean and dry them.

Prick each potato several times with a fork and place them on a baking sheet.

Bake for about 1 hour, or until tender when pierced with a fork.

Remove the potatoes from the oven and slice a V-shaped notch across the top.

Spoon the chilled cottage cheese filling into the potatoes and serve immediately.
Notes
2. Filling seems loose? Let it chill 10–15 minutes before filling the potatoes; it will firm up slightly.
3. Using smaller potatoes? Yes, reduce baking time and note they hold less filling.
4. Prevent potatoes from bursting Prick them with a fork before baking so steam can escape.
5. Storage
- Fridge: Store leftover potatoes and filling separately, covered, for up to 2 days.
- Reheating: Warm potatoes in the oven or microwave and add the filling just before serving.
- Make-ahead: Prepare the filling up to 1 day ahead and keep chilled; bake potatoes when ready to serve.
