
Delicious doesn’t have to be complicated. This sweet-and-savory Maple Bacon Cornbread is an easy twist on boxed cornbread mix and takes about 25 minutes from start to finish.

We often expect too much from ourselves and overlook the good we actually accomplish. I had one of those days where I felt unproductive, but looking back I realized I had done a lot: doctor’s visits, grocery and pharmacy runs, helping with music lessons, making meals, cleaning, researching photography gear, running errands, and squeezing in some work on my blog. This Maple Bacon Cornbread elevates boxed mix with pure maple syrup and a touch of bacon drippings for a sweet-smoky depth. Crispy bacon crumbles on top add texture and a salty-sweet contrast. If you like, drizzle a little warmed maple syrup over a fresh slice for an extra treat.
I’m a big bacon fan and prefer source-meat when I can. For this recipe, good-quality bacon and keeping a teaspoon of the drippings make a small but noticeable difference. Bacon works beautifully with bread in many forms, and in this cornbread it shines.

Ingredients
- 1 8.5 oz box cornbread mix
- 3 Tablespoons milk
- 3 Tablespoons pure maple syrup
- 1 large egg
- 5 slices bacon (reserve drippings)
- 1 teaspoon bacon drippings
Instructions

Preheat the oven to 425°F (220°C).

Fry the bacon until crisp, then transfer to paper towels to cool.

Reserve 1 teaspoon of the bacon drippings for the cornbread.

Generously grease an 8-inch round or square baking dish.

In a small bowl, mix the cornbread mix, egg, milk, maple syrup, and bacon drippings until just combined.

Spread the batter evenly in the prepared baking dish.

Crumble the bacon into small pieces and sprinkle over the top.

Bake for 12–14 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
