Peach Sorbet with Mint
Peak peach season in July and August means juicy, fragrant fruit and plenty of recipes to enjoy them. These peaches are large, sweet, and incredibly juicy—ideal for sorbet.
This easy peach sorbet is the perfect summer treat: sweet but not cloying, light, and incredibly satisfying. A spoonful is all it takes to make you want more.

Ingredients You’ll Need
Peaches. Use ripe, juicy peaches for the best flavor. Peel, pit, and chop the fruit before processing.
Mint. Fresh mint works best—about 8–10 medium leaves. Rinse and pat dry before adding.
Sugar. Granulated or superfine sugar works well. A sugar alternative can be used but will change the sweetness and texture.
Honey. Honey adds depth and helps produce a softer sorbet texture.
Fresh lemon juice and sea salt. Lemon brightens the peaches and enhances their natural sweetness; a pinch of sea salt balances the flavors.
Note: This recipe skips added water. The peaches are pureed with sugar and honey, which breaks down the fruit and releases enough liquid for a smooth sorbet with fewer ice crystals.

How to Make Peach Sorbet
Makes approximately 2 pints.
Ingredients:
- 4 1/2 cups chopped ripe peaches (about 6 peaches), peeled and pitted
- 8–10 fresh mint leaves
- 3/4 cup granulated or superfine sugar
- 1/4 cup honey
- 2 tbsp fresh lemon juice

Directions
- Combine peaches, mint, sugar, honey, lemon juice, and a pinch of sea salt in a blender or food processor. Puree until completely smooth.
- If you have an ice cream machine, pour the puree into the machine and follow the manufacturer’s instructions for sorbet.
- If you don’t have an ice cream maker, pour the mixture into a loaf pan, cover tightly with plastic wrap pressed directly onto the surface of the puree (this minimizes ice crystals), and freeze for 6–8 hours or overnight.
- Let the sorbet sit at room temperature for 5–10 minutes before scooping to soften slightly, then serve.

Tips and FAQs
Where to buy peaches: Fresh, high-quality peaches make a big difference. If you buy seasonal fruit from a local supplier, choose ripe, fragrant peaches.
Ice cream maker: An automatic ice cream machine simplifies churning and produces a smoother texture, but it’s not required.
What makes sorbet creamy? Natural fruit pectin and using fruit juice instead of added water contribute to a creamier texture. Honey and sugar also help keep the sorbet soft.
Can I use frozen peaches? Yes. Thaw them slightly so they release some juice before pureeing; this helps avoid adding extra water.
Storage: Store sorbet in an airtight, freezer-safe container with minimal headspace to reduce ice crystal formation and freezer burn.
How long does homemade sorbet last? Sorbet is best within about a month in the freezer. After that, ice crystals can form and affect texture and flavor.
To serve: Allow the sorbet to sit at room temperature for 5–10 minutes to soften slightly for easier scooping. Wiping your scoop with hot water and drying it first also helps.
Variations: You can substitute or add other fruits—strawberries, blueberries, or raspberries all pair nicely with peach. Mint is optional but adds a bright, refreshing note.
